Traceability, Withdrawal & Recall
Mock recall exercise: trace a contaminated lot upstream to ingredients and downstream to customers.
Day 2 Schedule
Allergen Management, Fraud & Defence
Audit allergen segregation, label control, food fraud vulnerability assessments (VACCP) and food defence (TACCP).

When clients hold multiple certificates, learn to navigate the differences without contradicting yourself.
Final Knowledge Assessment
Multiple-choice assessment covering every clause area introduced in Specialty: HACCP Practitioner & ISO 22000 Food Safety Lead Auditor. Pass mark 70%.
