Traceability, Withdrawal & Recall
Mock recall exercise: trace a contaminated lot upstream to ingredients and downstream to customers.

Allergen Management, Fraud & Defence
Audit allergen segregation, label control, food fraud vulnerability assessments (VACCP) and food defence (TACCP).
